At Poquitos we strive to present delicious Mexican cuisine prepared with ingredients that are the best of both worlds—outstanding local meats and produce plus unique and imported items essential to honoring the culinary traditions of Mexico. Our menu, executed by Chef Eddie Solis, features scratch-made guacamole and salsa, handmade tortilla chips fried in rice oil (the secret to that addictively light and crispy texture), seasonal margaritas made with fresh-pressed juices, a wide variety of local and imported cervezas, and rotating barrel-aged cocktails.

Our inspiration? Our sign! The original neon sign was salvaged in South Seattle and originally hung outside of a Mexican restaurant on Greenwood Avenue in Seattle through the early 80’s. The proprietor, pictured on the sign, was known for strolling through the restaurant, serenading his guests and playing guitar as he went. The restaurant also gained notoriety for the tree that grew up through the middle of the dining room.

Chef Edie Solis, originally from Yucatan, Mexico, has been with Poquitos Bothell since opening day in March 2018 and is always whipping up specials from his unique hometown perspective.

Poquitos has always sought to provide a comforting and friendly environment to everyone in the neighborhood. It’s a place to relax and enjoy food and drinks with friends and family—we opened up our second location in Bothell to bring something new and fresh to a welcoming and well-established neighborhood. General Manager Colleen Carson is a regular at community meetings and events and is known for treating guests and staff like family, a trait characteristic of all members of the Yes Parade Restaurant Group.
